Golden roasted sweet potato slices topped with creamy dollops of cheese and tart cranberries create a perfect balance of taste and texture. Perfect for parties, family dinners, or cozy snacking, this recipe is quick, wholesome, and versatile.

Ingredients

Scale
  • 2 medium sweet potatoes, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • ½ cup cream cheese, softened
  • ½ cup dried cranberries
  • 1 tablespoon fresh chives, chopped (optional)

Optional additions/substitutions:

  • Swap cream cheese for goat cheese for tangier flavor
  • Sprinkle cinnamon or nutmeg on potatoes before roasting
  • Replace chives with parsley or green onions

Instructions

  • Preheat oven to 425°F (220°C).

  • Toss sweet potato rounds with olive oil, salt, and pepper. Arrange on a baking sheet in a single layer.

  • Roast for 20–25 minutes, flipping halfway through, until tender and golden.

  • Let the rounds cool slightly, then spread a dollop of cream cheese on each.

  • Top with dried cranberries and sprinkle with chopped chives if desired.

  • Serve immediately as a delicious appetizer or snack.

Notes

  • Slice sweet potatoes evenly for uniform cooking.

  • Use softened cream cheese to avoid tearing the rounds.

  • Can be made ahead: roast potatoes and add cream cheese/cranberries just before serving.

  • Reheat in oven at 350°F for 5–10 minutes to restore crispiness.
