Description

Ingredients

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp ground cinnamon
  • ½ cup crumbled feta cheese
  • ⅓ cup dried cranberries (or cranberry sauce drizzle)
  • 2 tbsp honey (optional, for extra sweetness)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Toss the cubed butternut squash with olive oil, salt, pepper, and cinnamon until evenly coated.

  3. Spread squash in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and tender.

  4. Remove from oven and let cool slightly.

  5. Transfer to a serving dish and sprinkle with feta cheese.

  6. Drizzle with honey and cranberry sauce (or scatter dried cranberries).

  7. Garnish with fresh parsley before serving.
