Ingredients
1 medium sweet potato, peeled and diced
2 cups all-purpose flour, plus extra for dusting
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons olive oil, divided
1/2 cup caramelized onions (about 1 large onion)
1 tablespoon fresh sage, chopped
1/4 cup cranberry sauce
1/2 cup warm water (adjust as needed)
Instructions
1. Boil the diced sweet potato until tender, about 10 minutes. Drain and mash until smooth.
2. In a large bowl, mix flour, baking powder, and salt. Add mashed sweet potato, 1 tablespoon olive oil, and warm water. Stir to form a soft dough, adding more water or flour if necessary.
3. Knead the dough on a floured surface for 5 minutes until smooth and elastic. Cover and let rest for 15 minutes.
4. Divide dough into 4 equal portions. Roll each portion into a thin flatbread shape.
5. Heat a skillet over medium heat and brush with remaining olive oil. Cook each flatbread for 2-3 minutes per side, until golden brown and cooked through.
6. Spread caramelized onions over each flatbread, sprinkle with chopped sage, and drizzle cranberry sauce on top before serving.
Notes
For best results, ensure sweet potato is completely drained and mashed while warm.
