Ingredients
- 2 large sweet potatoes, peeled and sliced into ½-inch rounds
- 2 tbsp olive oil

- Salt & black pepper, to taste
- ¼ cup honey
- ⅓ cup dried cranberries
- 2 tbsp crumbled feta or goat cheese (optional)
- Fresh rosemary or thyme, for garnish
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, cinnamon, salt, and black pepper.
Arrange in a single layer on the prepared baking sheet. Roast 20–25 minutes, flipping halfway, until tender and golden.
Drizzle warm sweet potatoes with honey and sprinkle with dried cranberries and optional feta or goat cheese.
