Delicious Pistachio Crusted Brie Bites with Raspberry Honey Glaze—crispy puff pastry, creamy melted brie, nutty pistachios, and a sweet-tart raspberry drizzle perfect for parties, appetizers, or cozy nights in.
Ingredients
1 small wheel of brie cheese, cut into 1-inch cubes
½ cup finely chopped pistachios
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
3 tbsp raspberry preserves
1 tbsp honey
1 tsp lemon juice
Fresh thyme leaves, for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C) and cut puff pastry into 2-inch squares.
2. Place one cube of brie in the center of each square.
3. Sprinkle chopped pistachios over the brie and gently press them in.
4. Bring corners of puff pastry over brie to form parcels and brush with beaten egg.
5. Arrange bites on a parchment-lined baking sheet and bake 15–18 minutes until golden brown.
6. In a small saucepan, heat raspberry preserves, honey, and lemon juice until smooth.
7. Drizzle warm glaze over baked brie bites and garnish with fresh thyme and extra pistachios.
8. Serve immediately.
