Ingredients
8 oz (225g) brie cheese, cut into bite-sized cubes
¼ cup shelled pistachios, finely chopped
1 sheet puff pastry, thawed and cut into small squares
1 egg, beaten (for egg wash)
¼ cup cranberry sauce or fresh cranberries, chopped
2 tbsp honey
Fresh thyme or rosemary for garnish (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
2. Place puff pastry squares on the sheet and put a brie cube in the center of each.
3. Fold corners over to partially cover the brie and brush with beaten egg.
4. Sprinkle chopped pistachios over the top.
5. Bake 12–15 minutes until puff pastry is golden and puffed.
6. In a small saucepan, combine cranberry sauce and honey over low heat until warm and slightly thickened.
7. Drizzle glaze over baked brie bites and garnish with thyme or rosemary if desired.
8. Serve immediately.
Notes
Use fresh cranberries for a tangy kick or cranberry sauce for convenience.
Swap brie with camembert for a slightly earthier flavor.
Serve warm for the best melty, gooey experience.
Can be prepped ahead and frozen unbaked for easy baking later.
