Ingredients
1 baguette, sliced into ½-inch (1.25 cm) rounds
1 tablespoon (15 mL) olive oil
4 oz (115 g) brie cheese, sliced
1 ripe pear, thinly sliced
2 tablespoons (30 g) cranberry sauce or cranberry relish
1 tablespoon (15 mL) honey
½ teaspoon fresh thyme leaves
Optional: cracked black pepper for garnish
Instructions
1. Preheat oven to 375°F (190°C).
2. Brush baguette slices with olive oil and toast for 6–8 minutes until lightly golden.
3. Top each toasted slice with a piece of brie and a thin pear slice.
4. Return to the oven for 3–4 minutes, just until the brie begins to soften.
5. Remove from the oven and spoon a small amount of cranberry sauce over each crostini.
6. Warm honey slightly and mix in fresh thyme leaves.
7. Drizzle the thyme-infused honey over the crostini.
8. Garnish with cracked black pepper if desired and serve warm or at room temperature.
Notes
Use ripe but firm pears such as Bosc or Anjou for best results.
Substitute fig jam or raspberry preserves if you don’t have cranberry sauce.
Make ahead: Toast the baguette slices in advance and assemble right before serving.
