Ingredients
- For the Chicken Skewers:
- 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into cubes

- Salt & black pepper, to taste
- Wooden or metal skewers
- For the Mezze Tray:
- 1 cup hummus
- 1 cup tzatziki
- 1 cup tabbouleh or couscous salad
- ½ cup marinated olives
- ½ cup roasted red peppers
- ½ cup crumbled feta cheese
- Warm pita bread or flatbreads, cut into wedges
- Fresh veggies: cucumber slices, cherry tomatoes, carrot sticks
Instructions
In a bowl, whisk olive oil, garlic, lemon juice, paprika, cumin, oregano, salt, and pepper. Add the chicken cubes, toss to coat, and marinate for at least 30 minutes (up to 4 hours for deeper flavor).
Thread marinated chicken onto skewers.
Grill skewers over medium-high heat for 10–12 minutes, turning occasionally, until chicken is cooked through and edges are charred.
On a large tray, arrange hummus, tzatziki, tabbouleh, olives, roasted peppers, feta, pita wedges, and fresh veggies.
Place grilled chicken skewers in the center and serve immediately.
Notes
For best flavor, let the chicken marinate overnight.
If using wooden skewers, soak them in water for 30 minutes to prevent burning.
