  • For the Chicken Skewers:
  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt & black pepper, to taste
  • Wooden or metal skewers
  • For the Mezze Tray:
  • 1 cup hummus
  • 1 cup tzatziki
  • 1 cup tabbouleh or couscous salad
  • ½ cup marinated olives
  • ½ cup roasted red peppers
  • ½ cup crumbled feta cheese
  • Warm pita bread or flatbreads, cut into wedges
  • Fresh veggies: cucumber slices, cherry tomatoes, carrot sticks

Instructions

  • In a bowl, whisk olive oil, garlic, lemon juice, paprika, cumin, oregano, salt, and pepper. Add the chicken cubes, toss to coat, and marinate for at least 30 minutes (up to 4 hours for deeper flavor).

  • Thread marinated chicken onto skewers.

  • Grill skewers over medium-high heat for 10–12 minutes, turning occasionally, until chicken is cooked through and edges are charred.

  • On a large tray, arrange hummus, tzatziki, tabbouleh, olives, roasted peppers, feta, pita wedges, and fresh veggies.

 

  • Place grilled chicken skewers in the center and serve immediately.

Notes

  • For best flavor, let the chicken marinate overnight.

  • If using wooden skewers, soak them in water for 30 minutes to prevent burning.

  • You can swap in quinoa salad, goat cheese, or grilled vegetables for variety.

  • The mezze tray can be prepped a day in advance, but grill the chicken fresh for best results.
