Ingredients
- For the Chicken Skewers:
- 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into cubes
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and black pepper, to taste
- Wooden or metal skewers
- For the Mezze Sides:
- 1 cup hummus
- 1 cup tzatziki
- 1 cup tabbouleh or couscous salad
- ½ cup Kalamata olives
- Warm pita bread, cut into wedges
- ½ cup crumbled feta
- Fresh cucumber and tomato slices
Instructions
In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Add chicken cubes, toss to coat, and let marinate for at least 30 minutes (overnight if possible).
Thread chicken pieces onto skewers.
Grill or broil skewers for 8–10 minutes, turning occasionally, until lightly charred and fully cooked.
Arrange skewers on a platter with hummus, tzatziki, tabbouleh or couscous, olives, feta, pita wedges, and fresh veggies.
Garnish with parsley or dill and serve family-style.
Notes
For juicier results, use chicken thighs instead of breasts.
If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.
Make it ahead: marinate chicken in the morning and keep refrigerated until ready to cook.
