  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Wooden or metal skewers
  • For the Mezze Sides:
  • 1 cup hummus
  • 1 cup tzatziki
  • 1 cup tabbouleh or couscous salad
  • ½ cup Kalamata olives
  • Warm pita bread, cut into wedges
  • ½ cup crumbled feta
  • Fresh cucumber and tomato slices

Instructions

  • In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

  • Add chicken cubes, toss to coat, and let marinate for at least 30 minutes (overnight if possible).

  • Thread chicken pieces onto skewers.

  • Grill or broil skewers for 8–10 minutes, turning occasionally, until lightly charred and fully cooked.

  • Arrange skewers on a platter with hummus, tzatziki, tabbouleh or couscous, olives, feta, pita wedges, and fresh veggies.

 

  • Garnish with parsley or dill and serve family-style.

Notes

  • For juicier results, use chicken thighs instead of breasts.

  • If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.

  • Make it ahead: marinate chicken in the morning and keep refrigerated until ready to cook.
