Description

Juicy chicken cutlets topped with sweet cherry tomatoes, melted mozzarella, and fresh basil—an irresistible Italian-inspired meal perfect for weeknights or impressing guests.


Ingredients

2 large chicken breasts, halved horizontally

½ cup all-purpose flour

1 tsp garlic powder

Salt and black pepper, to taste

2 tbsp olive oil

1 cup cherry tomatoes, halved

4 oz fresh mozzarella, sliced or torn

2 tbsp fresh basil leaves, chopped

1 tbsp balsamic glaze (optional)

1 tsp olive oil

Salt and pepper, to taste


Instructions

1. Lightly season flour with garlic powder, salt, and pepper.

2. Dredge chicken cutlets in the flour mixture, shaking off excess.

3. Heat olive oil in a skillet over medium heat.

4. Cook chicken 4–5 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove and set aside.

5. Toss cherry tomatoes with olive oil, salt, and pepper.

6. Preheat oven broiler.

7. Place cooked chicken on a baking sheet and top with tomatoes and mozzarella.

8. Broil 2–3 minutes until cheese melts and bubbles.

9. Sprinkle with fresh basil and drizzle with balsamic glaze if desired.

10. Serve immediately.
