Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 cup pineapple chunks (fresh or canned)
  • 2 tbsp honey
  • 2 tbsp soy sauce (or coconut aminos for gluten-free)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp freshly grated ginger
  • 1 tbsp lime juice
  • ¼ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Preheat your grill or oven to 375°F (190°C).
  • Make the sauce: In a small bowl, whisk together honey, soy sauce, garlic, olive oil, ginger, lime juice, red pepper flakes, salt, and black pepper.
  • Assemble the packets: Lay out four large sheets of aluminum foil. Divide the shrimp and pineapple chunks evenly among the foil sheets.
  • Drizzle the marinade over the shrimp and pineapple. Fold the edges of the foil to create sealed packets.
  • Cook:
    • On the grill: Cook for 10-12 minutes until shrimp are pink and cooked through.
    • In the oven: Bake for 12-15 minutes on a baking sheet.
  • Carefully open the packets (watch out for steam!). Garnish with fresh cilantro and serve hot. Enjoy!

Notes

  • For extra flavor, marinate the shrimp for 15-30 minutes before assembling the packets.
  • Use fresh pineapple for the best caramelization and sweetness.
  • Make it spicier by adding extra red pepper flakes or a drizzle of sriracha.
  • Swap the shrimp for salmon, chicken, or tofu for a different protein option.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 2 days. Reheat gently on the stovetop to avoid overcooking the shrimp.
