Ingredients
- For the Chicken & Strawberry Glaze:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 cup fresh strawberries, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp fresh thyme leaves
- For the Feta Orzo Salad:
- 1 cup orzo pasta
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup diced cucumber
- 1/4 cup cherry tomatoes, halved
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the Orzo Salad
Boil orzo according to package instructions. Drain and rinse with cold water. Toss with feta, parsley, cucumber, cherry tomatoes, olive oil, lemon juice, salt, and pepper. Set aside. -
Prepare and Grill the Chicken
Brush chicken breasts with olive oil, and season with salt and pepper. Grill over medium heat for 6–7 minutes per side or until fully cooked and charred with grill marks. -
Make the Strawberry Balsamic Glaze
While the chicken cooks, combine strawberries, balsamic vinegar, honey, and thyme in a saucepan over medium heat. Simmer for 5–7 minutes until slightly thickened. Stir occasionally and mash the berries lightly to release their juices.

Assemble and Serve
Brush the grilled chicken with the warm glaze. Serve each chicken breast over a generous scoop of the feta orzo salad. Spoon additional glaze over the top if desired.
Notes
- Want to make it vegetarian? Sub the chicken for grilled tofu or halloumi.
