Juicy grilled chicken brushed with a sweet and tangy strawberry balsamic glaze, served over a refreshing orzo salad with creamy ricotta salata, cherry tomatoes, basil, and lemon. It’s gourmet, summery, and super easy!
Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1/2 cup fresh strawberries, chopped
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
For the Orzo Salad:
- 1 cup orzo pasta
- 1/2 cup ricotta salata, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions

In a small saucepan, simmer strawberries, balsamic vinegar, honey, and garlic for 8–10 minutes until syrupy. Set aside.

Season chicken with salt and pepper. Grill over medium-high heat for 6–7 minutes per side until fully cooked. Brush with glaze during the last few minutes.

Cook orzo according to package directions. Drain and let cool slightly.

In a large bowl, toss orzo with ricotta salata, cherry tomatoes, basil, olive oil, lemon juice, salt, and pepper.

Serve grilled chicken over the orzo salad and drizzle with remaining glaze.
