Grilled Chicken with Strawberry Balsamic Glaze & Ricotta Salata Orzo Salad

Description

Juicy grilled chicken brushed with a sweet and tangy strawberry balsamic glaze, served over a refreshing orzo salad with creamy ricotta salata, cherry tomatoes, basil, and lemon. It’s gourmet, summery, and super easy!


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup fresh strawberries, chopped
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Orzo Salad:

  • 1 cup orzo pasta
  • 1/2 cup ricotta salata, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. In a small saucepan, simmer strawberries, balsamic vinegar, honey, and garlic for 8–10 minutes until syrupy. Set aside.

  2. Season chicken with salt and pepper. Grill over medium-high heat for 6–7 minutes per side until fully cooked. Brush with glaze during the last few minutes.

  3. Cook orzo according to package directions. Drain and let cool slightly.

  4. In a large bowl, toss orzo with ricotta salata, cherry tomatoes, basil, olive oil, lemon juice, salt, and pepper.

  5. Serve grilled chicken over the orzo salad and drizzle with remaining glaze.

Notes

  • Don’t skip the glaze—it’s the star!

  • Use feta or parmesan if ricotta salata isn’t available.

  • Make both salad and glaze ahead and store separately.

 

  • Let orzo cool slightly before mixing to avoid melting the cheese.
