Ingredients

  • Salad:
  • 1 cup orzo pasta

  • 2 cups baby spinach, chopped

  • 1/2 cup cherry tomatoes, halved

  • 1/2 cup cucumber, diced

  • 1/2 cup canned chickpeas, rinsed and drained

  • 1/4 cup red onion, thinly sliced

  • 1/3 cup crumbled feta cheese

  • 2 tablespoons Kalamata olives, sliced (optional)

  • 2 tablespoons fresh parsley, chopped

  • Dressing:
  • 3 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon dried oregano

  • Salt and pepper, to taste


Instructions

  • Cook orzo according to package directions. Drain, rinse with cold water, and let cool.

  • In a large bowl, combine orzo, chopped spinach, tomatoes, cucumber, chickpeas, red onion, feta, olives (if using), and parsley.

  • In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, oregano, salt, and pepper.

  • Pour the dressing over the salad and toss gently until everything is well coated.

 

  • Serve immediately or refrigerate for 30 minutes to enhance the flavor before serving.
