Ingredients
- 8 oz halloumi cheese, sliced into ½-inch slabs
- 1 tbsp olive oil (for grilling)
- 1 cup hummus
- 1 cup tzatziki
- ½ cup marinated olives
- ½ cup roasted red peppers
- 1 cup cherry tomatoes, halved
- 1 small cucumber, sliced
- ½ cup crumbled feta cheese
- 1 cup warm pita bread or flatbreads, cut into wedges
- Fresh parsley, dill, or mint, for garnish
- Herb Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp fresh thyme or oregano, chopped
- 1 tsp fresh parsley, chopped
- Salt & black pepper, to taste
Instructions
Make the Herb Dressing: Whisk olive oil, lemon juice, chopped herbs, salt, and pepper in a small bowl until smooth.
Grill the Halloumi: Heat olive oil in a skillet or grill pan over medium-high. Cook halloumi slices 1–2 minutes per side until golden and slightly crisp.
Arrange the Platter: Spread hummus and tzatziki in bowls, then add olives, roasted peppers, cherry tomatoes, cucumber, feta, and warm pita. Place halloumi in the center.
Finish & Serve: Drizzle herb dressing over the halloumi and veggies. Garnish with extra fresh herbs and enjoy right away.
Notes
Halloumi is best served hot off the grill—it firms up as it cools.
You can prep veggies, dips, and dressing ahead, then just grill the cheese before serving.
