This Greek Chicken & Olive Mezze Board is everything you want in an easy entertaining spread—juicy marinated chicken, briny olives, creamy dips, and warm pita all arranged in a colorful, help-yourself style. It’s quick enough for weeknights but stunning enough for dinner parties.
Ingredients
- For the Chicken:
- 1 lb (450g) chicken breast, cut into strips
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- Salt & black pepper, to taste
- For the Mezze Board:
- 1 cup mixed olives (Kalamata, green, stuffed)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber slices
- ½ cup crumbled feta cheese
- ½ red onion, thinly sliced
- Warm pita bread, cut into wedges
- ½ cup hummus
- ½ cup tzatziki
- Fresh parsley, for garnish
Instructions
Marinate the chicken: In a bowl, whisk together olive oil, oregano, paprika, garlic, lemon juice, salt, and pepper. Toss chicken strips in marinade, then let rest for 20 minutes.
Cook the chicken: Grill or pan-sear until golden and fully cooked, about 8–10 minutes. Let rest a few minutes before slicing.
Assemble the board: Arrange chicken in the center, then surround with olives, cherry tomatoes, cucumber, red onion, feta, hummus, tzatziki, and pita wedges.
Finish with garnish: Sprinkle parsley over the top and serve immediately.
Notes
For a vegetarian version, swap chicken with roasted chickpeas or grilled halloumi.
Warm pita just before serving for the best texture.
You can marinate the chicken up to 24 hours ahead for deeper flavor.
Add extras like baba ganoush, stuffed grape leaves, or couscous salad to make the board more festive.
