Ingredients
- For the Chicken:
- 1 ½ lbs (700g) boneless, skinless chicken breasts or thighs
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt & black pepper, to taste
- For the Platter Sides:
- 1 cup hummus
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, pitted
- ½ cup crumbled feta cheese
- Warm pita bread or pita chips
- For the Pomegranate Drizzle:
- ½ cup pomegranate juice
- 1 tbsp honey or maple syrup
- 1 tsp balsamic vinegar
Instructions

Marinate the chicken: Mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Toss chicken in marinade and refrigerate at least 30 minutes.
