Ingredients

- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1/2 cup hummus
- 4 pita or flatbreads, warmed
- Fresh parsley, chopped
- Balsamic Drizzle
- 2 tbsp balsamic glaze
- 1 tsp olive oil
Instructions
Marinate the chicken: In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken, coat well, and marinate for at least 30 minutes (or up to overnight for deeper flavor).
Cook the chicken: Grill or pan-sear over medium-high heat for 5–6 minutes per side until golden brown and fully cooked. Slice into strips.
