  • 1/2 teaspoon smoked paprika

  • Salt and black pepper, to taste

  • 1/4 cup grated Parmesan cheese

For the Sautéed Spinach:

  • 1 tablespoon olive oil

  • 3 cups fresh spinach

  • 1 clove garlic, minced

  • Salt and black pepper, to taste

For the Lemon Drizzle:

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon honey (or maple syrup for a vegan option)

  • 1 tablespoon olive oil


Instructions

1️⃣ Roast the Chickpeas:

  • Preheat oven to 400°F (200°C).

  • Pat chickpeas dry with a paper towel to remove excess moisture.

  • Toss with olive oil, garlic powder, smoked paprika, salt, and black pepper.

  • Spread evenly on a baking sheet and roast for 20-25 minutes, shaking halfway through, until golden and crispy.

  • Remove from oven, sprinkle with Parmesan, and toss while warm.

2️⃣ Sauté the Spinach:

  • Heat olive oil in a pan over medium heat.

  • Add minced garlic and cook for 30 seconds until fragrant.

  • Toss in spinach, season with salt and pepper, and sauté until wilted (about 2 minutes). Remove from heat.

3️⃣ Make the Lemon Drizzle:

  • In a small bowl, whisk together lemon juice, honey, and olive oil until smooth.

4️⃣ Assemble & Serve:

 

  • Place sautéed spinach on a serving plate.

  • Top with crispy Parmesan chickpeas.

  • Drizzle with the lemon dressing and enjoy immediately!
