-
1 tablespoon olive oil
Instructions
1️⃣ Roast the Chickpeas:
-
Preheat oven to 400°F (200°C).
-
Pat chickpeas dry with a paper towel to remove excess moisture.
-
Toss with olive oil, garlic powder, smoked paprika, salt, and black pepper.

-
Remove from oven, sprinkle with Parmesan, and toss while warm.

Heat olive oil in a pan over medium heat.
-
Add minced garlic and cook for 30 seconds until fragrant.
-
Toss in spinach, season with salt and pepper, and sauté until wilted (about 2 minutes). Remove from heat.
3️⃣ Make the Lemon Drizzle:
-
In a small bowl, whisk together lemon juice, honey, and olive oil until smooth.
4️⃣ Assemble & Serve:
-
Place sautéed spinach on a serving plate.
-
Top with crispy Parmesan chickpeas.
-
Drizzle with the lemon dressing and enjoy immediately!
Notes
💡 Make it Vegan: Swap Parmesan for nutritional yeast and use maple syrup instead of honey.
💡 Extra Crispy Tip: Let chickpeas cool on the baking sheet for 5 minutes before tossing with Parmesan.
💡 Storage: Store chickpeas separately at room temperature for 1 day or refrigerate for up to 3 days. Reheat in the oven to restore crispiness.
