  • 4 large flour tortillas or flatbreads
  • 8 oz feta cheese, cut into sticks
  • ½ cup panko breadcrumbs
  • 1 egg, beaten
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste
  • 1 cup mixed greens (optional)
  • For the Spicy Honey Drizzle
  • 2 tbsp honey
  • ½ tsp red pepper flakes (adjust to taste)
  • 1 tsp lemon juice

Instructions

  • Preheat and prepare: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Coat the feta: Dip each feta stick in the beaten egg, then roll it through a mix of panko breadcrumbs, smoked paprika, salt, and pepper until fully coated.

  • Bake to golden perfection: Arrange the coated feta sticks on the prepared baking sheet. Drizzle lightly with olive oil and bake for 12–15 minutes, or until crisp and golden brown.

  • Whisk the drizzle: In a small bowl, combine honey, red pepper flakes, and lemon juice. Stir until smooth and glossy.

  • Assemble the wraps: Warm the tortillas, add a handful of greens (if using), layer on the baked feta, and spoon over the spicy honey drizzle.

 

  • Wrap it up and serve: Roll tightly, slice in half if you like, and serve immediately while the feta is warm and creamy inside.

Notes

  • For extra crunch, try using panko instead of regular breadcrumbs—it makes all the difference.

  • Not a fan of heat? Cut the red pepper flakes by half or skip them altogether.

  • These wraps taste best fresh but can be reheated in an air fryer for a few minutes.
