Description

This Cherry Tomato & Burrata Pasta is a simple yet indulgent dish bursting with fresh flavors. Juicy cherry tomatoes are blistered to perfection, infused with garlic and oregano, and tossed with tender pasta. The finishing touch? Ingredients

  • 8 oz pasta (spaghetti, penne, or your choice)

  • 1 tbsp olive oil

  • 2 cups cherry tomatoes, halved

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp red pepper flakes (optional)

  • ½ cup fresh basil, chopped

  • 8 oz burrata cheese, torn

  • Salt & pepper, to taste

  • ¼ cup grated Parmesan cheese (optional)


Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water before draining.

  • Sauté the Tomatoes: While the pasta cooks, heat olive oil in a skillet over medium heat. Add cherry tomatoes and cook for 5-7 minutes until softened and blistered.

  • Add Flavor: Stir in garlic, oregano, and red pepper flakes (if using). Season with salt & pepper to taste.

  • Combine: Toss the drained pasta with the tomato mixture. If dry, add reserved pasta water 1 tablespoon at a time until it reaches the desired consistency.

  • Add Burrata: Tear the burrata into pieces and place on top of the warm pasta. Let it melt slightly.

 

  • Garnish & Serve: Sprinkle with fresh basil and Parmesan cheese (if using). Serve immediately and enjoy!
