Description

Ingredients

2 medium sweet potatoes, peeled and sliced into rounds

2 tbsp olive oil

1 ½ tbsp honey

½ tsp cinnamon (optional)

Salt & pepper, to taste

¼ cup crumbled goat cheese

¼ cup chopped toasted walnuts

Fresh thyme or rosemary, for garnish


Instructions

1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.

2. Toss sweet potato rounds in olive oil, honey, cinnamon (if using), salt, and pepper until evenly coated.

3. Arrange the slices in a single layer on the baking sheet and bake for 25–30 minutes, flipping halfway through, until golden and caramelized.

4. Transfer to a serving plate and sprinkle with goat cheese and toasted walnuts.

5. Drizzle lightly with extra honey and garnish with fresh thyme or rosemary before serving.
