Ingredients
- 3 medium sweet potatoes, peeled and cut into cubes
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 1/3 cup walnuts, toasted and roughly chopped
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large bowl, toss the cubed sweet potatoes with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper until coated.
Spread the sweet potatoes evenly on the prepared baking sheet, making sure they’re not crowded.
Roast for 25–30 minutes, flipping once halfway, until the potatoes are tender and caramelized at the edges.
Remove from the oven, transfer to a serving dish, and sprinkle with feta and toasted walnuts.
Garnish with fresh parsley and serve warm.
