Ingredients
- 1 store-bought flatbread or pizza crust
- 100 g (3.5 oz) brie cheese, sliced
- ½ cup fresh blueberries
- 1 tsp fresh thyme leaves
- 1–2 tbsp honey
- 1 tbsp olive oil
- Pinch of salt and pepper
Optional Substitutions:
- Feta or goat cheese instead of brie
- Agave syrup instead of honey
- Whole wheat flatbread for a heartier texture
Instructions
Preheat the oven to 200°C (400°F).
Lightly brush the flatbread with olive oil.
Arrange brie slices evenly over the flatbread.
Scatter blueberries on top and sprinkle with thyme, salt, and pepper.
Bake for 10–12 minutes until the brie is melted and the flatbread edges are golden.
Drizzle honey over the warm flatbread before serving.
Slice and enjoy immediately as a snack or appetizer.
Notes
Don’t over-bake; brie should be melted but not browned too much.
Adjust honey depending on blueberry sweetness.
Use fresh thyme for the best flavor.
Can be made ahead and baked just before serving.
Reheat leftovers in a warm oven to restore melty texture.
