Description

This balsamic glazed chicken with orzo, roasted red peppers, and creamy feta is your new go-to weeknight dinner. It’s sweet, savory, and totally satisfying—all in just one pan and 30 minutes! With juicy chicken, garlic-kissed pasta, and a touch of tangy balsamic glaze, this dish is anything but boring!!


Ingredients

  • 1 lb boneless, skinless chicken breasts

  • 1/3 cup balsamic glaze (store-bought or homemade)

  • 1 tbsp olive oil

  • 1 cup uncooked orzo pasta

  • 2 cups chicken broth

  • 1/2 cup crumbled feta cheese

  • 1/2 cup roasted red peppers, sliced

  • 2 cloves garlic, minced

  • 1/4 tsp dried oregano

  • Salt and black pepper, to taste

  • Fresh basil or parsley, for garnish


Instructions

  1. Season chicken with salt, pepper, and oregano.

  2. Heat olive oil in a large skillet over medium-high. Sear chicken for 5–6 minutes per side, until fully cooked and golden.

  3. Brush both sides with balsamic glaze. Reduce heat slightly and let the glaze caramelize, about 1–2 minutes per side. Remove chicken and let rest.

  4. In the same pan, add garlic and sauté for 30 seconds. Stir in orzo and toast lightly for 1 minute.

  5. Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and liquid is absorbed.

  6. Stir in roasted red peppers and feta.

  7. Slice the chicken and nestle it over the orzo. Drizzle with more balsamic glaze and garnish with fresh herbs before serving.

Notes

  • Want extra creaminess? Stir in a spoonful of Greek yogurt or hummus.

  • Swap orzo with quinoa or couscous for a gluten-free or nutty variation.

  • This dish pairs beautifully with a green salad or roasted vegetables.
