Description
Apple Cheddar & Pecan Salad combines crisp apples, sharp cheddar cheese, toasted pecans, dried cranberries, fresh greens, and optional pomegranate seeds with a sweet and tangy maple Dijon dressing.
Ingredients
FOR THE SALAD
4 cups mixed baby greens or arugula
2 medium crisp apples, thinly sliced
1 cup sharp cheddar cheese, cubed or crumbled
1/2 cup toasted pecans, roughly chopped
1/3 cup dried cranberries
1/4 small red onion, thinly sliced
1/4 cup pomegranate seeds, optional
FOR THE MAPLE DIJON DRESSING
3 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp pure maple syrup
1 tsp Dijon mustard
1 tsp fresh lemon juice
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
FOR GARNISH
Extra toasted pecans
A few fresh thyme leaves
Freshly cracked black pepper
Instructions
1. Toast the pecans: Place the pecans in a dry skillet over medium-low heat. Toast for 3–5 minutes, stirring frequently, until fragrant. Transfer to a plate and set aside to cool.
2. Prepare the dressing: In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, lemon juice, salt, and black pepper until smooth and emulsified.
3. Prepare the apples: Wash, core, and thinly slice the apples. For extra freshness, toss them with a little lemon juice to help prevent browning.
4. Assemble the greens: Arrange the mixed greens or arugula in a large serving bowl or platter.
5. Add the toppings: Scatter the sliced apples, cheddar, toasted pecans, dried cranberries, and red onion over the greens.
6. Dress the salad: Drizzle the maple Dijon dressing evenly over the salad just before serving.
7. Finish: Add pomegranate seeds if desired, sprinkle with extra pecans, and finish with freshly cracked black pepper and fresh thyme.
8. Serve immediately: Toss gently to combine or serve as a beautiful layered salad.
Notes
Keep the dressing separate until just before serving to maintain crisp greens and crunchy pecans.
Use crisp apples such as Honeycrisp, Pink Lady, Fuji, or Granny Smith.
Walnuts or almonds can be substituted for pecans.
The salad can be prepared ahead by storing the greens, toppings, and dressing separately.
For extra protein, add grilled chicken or chickpeas.
